Pad Thai Stir Fry Noodles

If you are a pro and have your own way of making Pad Thai, then skip it. But if you would like to know how our Family makes Pad Thai, here is a
few no-recipe suggestions.

Ingredients: This is a recommendation making for 2 servings.

  • Dry rice noodles (thin or thick as you prefer)
  • 1 cup of water
  • 2 tbsp cooking oil
  • 2 eggs
  • 4 cloves of chopped garlic
  • 1 bag of beansprout
  • shrimp and vegetables (optional)
  • fish sauce (more if desired)
  • chili powder (more if desired)

For the toppings

  • 3 tbsp chopped green onion 
  • 2 tbsp chopped peanut (more if desired)
  • 1 lime

 Instructions

In a bowl soak dry rice noodles in water for 15-30 minutes

In a wok or large pan lightly sear shrimp & set aside

Add beaten egg stirring to fry quickly & and set aside

Heat medium-low, add oil & heat garlic till fragrant

Add snow peas/vegetables & stir fry lightly (optional)

Add drained noodles into the pan stirring with med-high heat

Add 1 cup of water to steam noodles till tender

Add Lanna Table Pad Sauce from the bottle to taste

When sauce simmers add back shrimp and egg

Stir fry until shrimp are cooked and bean sprouts for just a few minutes

Add optional garnishes and serve.
